Mozzarella Sticks for the Freezer

cup Italian bread crumbs

tablespoon milk

pound mozzarella cheese -- cut into 3/4 inch x 3/4 inch
strips (or you can use string cheese and cut each in half)
Whisk eggs and milk together.
Cut cheese into 3/4 inch by 3/4 inch sticks or cut string cheese in
equal halves.
Coat each piece of cheese with flour, then dip in egg and then roll in
bread crumbs.
Dip in egg and crumbs again.
Place on a wax paper covered cookie sheet after breading.
Freeze for 2-3 hours.
Heat oil in skillet to 350 degrees and cook about 6-8 sticks at a time
for about a minute on each side, or until golden and before cheese
starts to leak. You can also use a deep fryer. Fry for 1 minute. Don't
leave in too long or you'll have a big mess.
Drain on paper towels.
Allow sticks to cool for a couple of minutes before eating.
Repeat with the next batch after allowing oil to come back up to 350
degrees.
If you want to keep your sticks warm, heat oven to warm or 200 degrees.
Turn oven off. Keep cheese sticks in the oven on a cookie sheet in
between batches.
Serve with marinara sauce for dipping.
For OAMC: Freeze sticks until solid after breading. Place in a gallon
freezer bag and store until ready to use.
To use: Heat oil to 350 degrees in skillet or deep fryer. Cook for 1-2
minutes or until breading is browned and before cheese oozes out of
breading. Allow sticks to cool for a couple of minutes before eating.
Serve with sauce.
