                         Appetizer Spinach Balls

  2              pkgs.  frozen chopped spinach -- (10 oz.) thawed
  2               cups  herb-seasoned stuffing cubes -- crushed equivalent to a 6 ounce box stuffing mix
  1                cup  grated Parmesan cheese
     1/2           cup  onion -- finely minced
  6              large  eggs -- beaten
     3/4           cup  butter -- softened
     1/2      teaspoon  salt
     1/8      teaspoon  pepper
     1/2      teaspoon  dried thyme leaves
     1/4      teaspoon  ground nutmeg
                        optional
  4             slices  cooked bacon -- crumbled

Drain spinach well by pressing in colander and using paper towels to remove excess moisture. Crush enough herb stuffing cubes to make 2 cups of crumbs. Mince onions finely.

Combine all ingredients and  in large bowl. Roll into 1" balls. Preheat oven to 350 degrees F. Place balls on an ungreased cookie sheets and bake for 10 minutes. Makes about 50 appetizers. Approximately 4 balls per person.

To freeze ahead, make appetizers and freeze unbaked.

Bake, frozen, in preheated 350 degrees F oven for 14-18 minutes until hot and crisp.
